Mezcal Noble Coyote spirits are certified as “artisanal” mezcals by the Mexican Consejo Regulador del Mezcal (CRM). NOM 70 proscribes the cooking, grinding, fermentation and distillation of agave to make mezcal. All Noble Coyote mezcals adhere to the stringent requirements of NOM 70 and are certified at each step of the process.
